Instructions:

  1. Prepare the Base:

    • In a large bowl, combine the rolled oats, chopped nuts, seeds, and dried fruit. If using chocolate chips or cacao nibs, add them here as well.
  2. Mix Wet Ingredients:

    • In a medium saucepan, gently heat the nut butter and honey (or maple syrup) over low heat until melted and well combined. Stir in the vanilla extract if using.
  3. Combine Ingredients:

    • Refrigerate the pan for at least 1-2 hours, or until the mixture is firm.

    • Store in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
